KENTUCKY BAKED CHICKEN

In my many years of training I’ve eaten a lot of plain chicken and I’ve become dangerously bored of it. Here’s a quick way of making it taste like it’s a bit naughty when really it isn’t.

Ingredients

  • Chicken breasts (I used 5 because I get through them quickly)
  • 1 whole egg
  • Some crisp breads (I used 5 crisp breads, the more you use the more “batter” you will have on the chicken.)
  • Reduced Salt Chicken seasoning
  • Piri Piri seasoning (You can use whatever spice you like really)
  • Black Pepper

 

4 Simple Steps

1.     Place the crisp breads in a large sandwich bag and smash them up with a rolling pin. Pour the smashed up crisp breads into a large bowl and mix in a good serving of the chicken seasoning and spice.

2.     Drop the chicken breasts in a large bowl and crack the egg over them. Mix them up with your hands so that each chicken breast is evenly covered with egg.

 

3.     Take each chicken breast in turn and dip it into the bowl of seasoning, making sure that each one is evenly covered.

 

4.     Whack them on a baking tray and cook in the oven on Gas Mark 5 for approximately 35 mins, or until cooked through.

There you have it. Tastes good, packed with protein and significantly better for you than a KFC.

Serve with sweet potato fries and some rocket and you have a tasty, healthy meal!
