SPICY CINNAMON CHICKEN

I'm always on the lookout for simple ways to make chicken interesting, preferably with minimal effort. This is a recipe that caught my eye on one of my friend's recipe apps. It's super easy, pretty damn tasty and you can make it in bulk and snack on it later.

For the chicken, you will need:

Chicken breasts (I used 6 decent sized ones)

1 1/2 tsp Curry Powder

1 1/2 tsp Cinnamon  

1 tsp Garlic granules (you could just crush some cloves up and get them in the mix)

1 tbsp Smoked paprika  

Good glug of olive oil

A pinch of sea salt and plenty of black pepper.  

STEP 1 

Mix all of the seasonings together in a bowl then sprinkle it all over the chicken breasts. Splash on the olive oil and then rub the spices and oil into the chicken breasts, ensuring that the chicken is evenly covered on both sides.

STEP 2 

Get the chicken in the oven on Gas Mark 5 for 25 - 30 minutes or until cooked thoroughly.

There you have it, simple, tasty chicken breasts. Takes about 2 minutes to prepare and changes the flavour of the chicken completely.

I used the chicken here for a quick (and great) post-workout snack.  High protein, medium/high carbs, high micronutrients and low fat, which is the ideal combination straight after a heavy workout. I've got 1 1/2 spicy chicken breasts in there, 2 slices of ham, a tomato, half a beetroot, a handful of lettuce, some rocket, some slices of cucumber and some low fat mayo.
